     White teas are the most delicate of all teas and undergo the least amount of processing during manufacture. Processing consists of only two steps, steaming and and drying. The absence of withering and rolling in the processing results in the leaves almost unaltered.

     White tea is noted for subtlety of flavor and and natural sweetness.

     White tea has almost no caffeine and is very rich in polyphenols.

Brewing Suggestions:  Water should be slightly under boiling temperature, tea is very light and bulky, use two heaping teas spoons of tea, and steep for three minutes.
